Blood Orange Fennel Salad
~ 20 minutes cook time
3-4 servings
Ingredients
- 1 bulb of fennel
- 1/2 cup of good extra virgin olive oil
- 1/2 a red onion
- 3 blood oranges
- 1 cup of olives
- 2 tsp of sea salt
- 2 tsp of freshly ground black pepper
Equipment
- 1 large mixing bowl
- mandoline slicer
- 1 chef's knife
Prep
- Slice the entire fennel bulb with the mandoline slicer, add to the large mixing bowl
- Slice half the red onion with the mandoline slicer, add to the large mixing bowl
- Cube the blood oranges, add to the large mixing bowl
Cook
- Add olives, olive oil, salt, pepper and mix everything together.
