Blood Orange Fennel Salad

3-4 servings

Ingredients

  • 1 bulb of fennel
  • 1/2 cup of good extra virgin olive oil
  • 1/2 a red onion
  • 3 blood oranges
  • 1 cup of olives
  • 2 tsp of sea salt
  • 2 tsp of freshly ground black pepper

Equipment

  • 1 large mixing bowl
  • mandoline slicer
  • 1 chef's knife

Prep

  • Slice the entire fennel bulb with the mandoline slicer, add to the large mixing bowl
  • Slice half the red onion with the mandoline slicer, add to the large mixing bowl
  • Cube the blood oranges, add to the large mixing bowl

Cook

  • Add olives, olive oil, salt, pepper and mix everything together.
  • Donezo.
