Chemex Coffee Brew
Original Recipe

2-3 full mug, 3-4 half mug
Ingredients
- 50 grams whole coffee beans
- 800g of 210°F water
Equipment
- Chemex
- Bonded chemex square paper filter
- Kitchen scale
- Kettle
- Automatic coffee grinder
- Timer
Prep
- Set water on kettle
- Grind whole bean to make sea-salt sized grounds. (about 3-4 on your coffee grinder)
- Place filter on chemex. Double side toward spout. Weigh out 50g of coffee grounds.
- Once water is at 210°F pour a little on the filter in the the chemex. Swirl and pour out.
Brew
- Place empty chemex with filter and grounds on scale and tare the weight.
- In growing concentric circles (out and then back in), pour 100g of water. Wait until 45 seconds.
- At 45 seconds, pour to 300g with same motion, wait until 1 minute 50 seconds.
- At 1m 50 seconds, pour to 500g with same motion, wait until 3 minutes 10 seconds.
- At 3 minutes 10 seconds, pour to 700g of water, wait until it fully drains.
