Michael Psilakis Garlic Confit
~ 1 hour cook time 3 cups

Ingredients
- 3 cups peeled garlic cloves
- 2 dried bay leaves
- 10 sprigs of thyme
- 1 tbsp kosher salt
- 1.5 tsp of black peppercorns
- 1 cup of conola oil
- 1 cup of extra virgin olive oil
Equipment
- 1 oval baking dish
- aluminum foil
Prep
- Peel 3 cups of garlic cloves
- Preheat oven too 300°F
Cook
- Add conola oil, extra virgin olive oil to dish and mix.
- Add peppercorns, salt, and thyme and mix.
- Add garlic to baking dish, cover with aluminum foil and set in oven.
