Sesame Crispy Eggs

Ingredients
- 2 large eggs
- extra virgin olive oil
- 1 large pinch of salt
- sesame seeds
- 1 tsp of sesame oil
Equipment
- 1 pan (lid optional)
- 1 small ingredient bowl
- 1 spoon
Prep
- Crack eggs and set aside in small bowl.
Cook
- Set the pan on highest flame heat for 1 minute.
- Add enough oil to coat bottom of pan with a little extra. Turn on fan.
- Wait until oil starts smoking
- Try to reduce splash by dumping the bowl close to the pan, add eggs to smoking oil.
- Egg whites will puff up and crisp. Use spoon to ladel hot oil on the top of the egg.
- Drizzle with sesame oil and sesame seeds.
